Well, I'm officially sick.
I am suffering from the worst chills I've ever had in my entire life. My hands can't seem to warm up no matter what...and I'm bundled up in my fleece plush bathrobe...sipping hot tea.
On top of that, my body doesn't seem to want to make up its mind over just how sick it should be. One moment I'm feverish all over. Next I have a headache. Still I'm not sick enough to stay in bed.
Thankfully, apple cobbler is one of those things you don't have to make up your mind about.
Warm cinnamon apples with a delicious streusel topping? YUM.
Apples are the epitome of "Fall fruit." I particularly love Fuji apples. It might have something to do with my mother buying Fujis and Fujis only. We have this vigilant aversion toward all apples that are not Fujis, in particular the Red Delicious Apple.
I ate my first Red Delicious Apple during my first year in America. Boy, was I fooled. I never ate the apple again. Even at age ten I knew what was what.
I still remember learning to peel apples with a knife. My mother had to show me how to hold the apple with my left hand and use my right thumb to "guide" the knife into the apple skin. After so many years, I think I'm quite decent now. Not as good as mom, though.
...and the beau-ti-ful streusel goes on top.
What a beautiful cobbler. And so tasty that you might not even need vanilla ice cream on top.
Warm Apple Cobbler
*makes one 9x13-in pan*
Ingredients:
Apples:
- 5 large Fuji apples, peeled, cored, cut into 1/2-inch-thick slices
- 1 tablespoon fresh lemon juice
- 1 teaspoon finely grated lemon peel
- 1 teaspoon vanilla extract
- 1/3 cup (packed) dark brown sugar
- 2 tablespoons all purpose flour
- 1 teaspoon ground cinnamon
- 6 tablespoons (3/4 stick) unsalted butter, melted, cooled slightly
- 2 large eggs
- 2 cups all purpose flour
- 1 1/3 cups sugar
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
you know- I might end up trying that even though I super hate apples. And you know what- I've never peeled an apple before- what a weird concept. (now potatoes- that I can peel well :P)
